Crockpot Queso Chicken

This is a dish my wife and I came up with one sunny day when we were hungry and walking through Aldi. We weren’t following any recipe, we just had an idea and ran with it… and it is amazing!!! This has become one of our favorite go-to healthy dishes. It is very versatile, packed with protein and fiber and a lot of flavor. We like to eat it with a little bit of our Protein-Packed Ranch Dip.  Please give it a try and let us know what you think! We hope you love it as much as we do 🙂

 

Utensils/Appliances Needed:

  • Crockpot
  • Two Forks
  • Can Opener
  • Bowls/Plates for Serving

 

Ingredients:

  • Family Pack of Boneless Chicken Breasts (4-5lbs)
  • 4 12oz cans of Black Beans
  • 2 10oz cans of Rotel (Diced Tomatoes and Green Chiles)
  • 2 15oz cans of Sweet Corn
  • 10oz Block of Pueblo Linda Queso Fresco Cheese (Grated)

 

Directions:

  1. Line the bottom of the crockpot with chicken breasts
  2. Add the black beans, rotel, queso and sweet corn
  3. Cook on high for 4 hours or low for 8 hours
  4. Serve either on its own, in a tortilla, with chips, or a number of different ways. It’s a very versatile dish, only limited by your creativity. Enjoy 😊
